chore(packaging): Drop Windows NSIS builds and rename ZIP to lite

Description

Windows CI no longer generates the NSIS .exe installer and now ships only .msi and .zip artifacts. The ZIP artifact is renamed from *-portable.zip to *-lite.zip, and getting started docs were updated to remove .exe download links, simplify installer log guidance, and point portable-download instructions to the new lite package names.
