chore(deps): add vite override for codecov plugin - #5576

Add an npm override so `@codecov/vite-plugin` always uses the project’s pinned Vite version, avoiding dependency mismatches. Update `vite.config.js` to run Codecov in `dryRun` mode outside `LizardByte/Sunshine` and only enable telemetry in the main repository, preventing unintended uploads from forks.
