[Replay] Align Replay event metadata

Replay Event metadata currently overwrites the SDK's name and version for replay events. We should align the metadata now that we migrated into the monorepo.

• build(replay): Remove replay version string replacement #6367
  • This was reverted in Revert "build(replay): Remove replay version string replacement (#6367)" #6379 (see PR for reason)
• ref(replay): Send SDK's name in replay event #6514
• once we export via Browser SDK: Align version!

Setting this back to ToDo, as we're holding off from making these changes for the time being. Priority is low for this one.
