chore: Fix JaCoCo code coverage in pom.xml to prevent build failures for contributors.

The current instruction coverage ratios for com.google.genai and com.google.genai.types fell below the configured JaCoCo minimum thresholds, causing Maven builds to fail during mvn test.

Ported from #800.
